At Summer Shack, we sauté the whole fresh fish (trimmed and skinned) and then top it with only brown butter, lemon, capers and parsley. The flavor is mild and sweet, and needs only the simplest accompaniments. The juicy white flesh is very firm with a texture close to Dover Sole, making it very easy for my guests to eat it on the bone. Because the size of the fish are very uniform, my cooks always do a good job with doneness. Our customers praise GreatBay Fluke nightly...it’s a great addition to our menu."
